A bit of a game-changer for me. No more wondering why the heat is set to 85...

If you hold down the infotainment/HVAC menu button, the default screen choice pops up.

Set it to infotainment and never have to worry about the switch. Only when I have to adjust the AC/Heat.

I did not find this, this was from someone on one of the EV6 groups that found this. Just here providing the information.

I was going back and forth, then left it set to return to infotainment. Even at that, I had a problem since I instinctively reached for the left knob to adjust the volume, where I invariably brushed my knuckle on the HVAC Auto, bringing back the HVAC operation and changing the temperature. Ugh! I'm now training myself to only use the steering wheel rocker switch to adjust the volume.
