I noticed this in the manual:

This makes even less sense with the EV6; for an ICE vehicle you might get some of the exhaust sucked in.

It's a common belief in Korea that sleeping with a fan on will somehow deplete the oxygen or cause hypothermia.

I live in Phoenix, where it can be 90F (32C) at night. If sleeping with a fan on were dangerous, I would have died decades ago.

I suppose in theory if the recirculation is engaged CO2 levels could rise after a long period?

Still seems pretty unlikely!
