New 2025 EV6 GT-Line Owner Intro + Q's

Hello all!
My previous car (2004 Allroad 6MT w/ 295Kmi) had a costly repair come up about 5 days before the U.S. Federal EV credits expired, so I'm now an EV6 GT-Line AWD owner (still waiting to take delivery as they transport it from the dealer it was located at to my local dealership). I'll be dropping it off at a well regarded local shop to get paint protection and ceramic window film applied.

I have several friends/neighbors with an EV6/Ioniq 5, so the EV6 was high on my list of acceptable vehicles to move on to, so as much as I'll miss my old one, I'm excited for my EV6 future.

After reading through the forum, reddit, and general google search I had some questions I couldn't find answers to.

It appears I can't post my full questions as a first post, so I'll follow up with them as a response.

Hitch
It looks like Torklift and CURT have yet to release a hitch for, or verify the older model will fit, the 2025 model. Has anyone with a 2025 used a Torklift or CURT on theirs?
From Stealth, they have one specific for the 2025, there are two harness options, a Stealth and Active, but I haven't been able to find any information on them and the differences. Is anyone aware of a link that explains the difference? Or is willing to explain the difference?
I won't use the hitch that often, so I'm leaning towards the Stealth option.

Roof Rails
I have a Thule box I want to be able to use on the EV6.
Has anyone installed the Yakima Track system to their roof? I've only seen one post by a person that did this, but no follow-ups or other people that went this route.

Dash Cam
Is it worth installing a dash cam, or will the car use the built-in cameras to act like a dash cam? Most of the posts I've found are several years old, so not sure if things just haven't changed, or no one is talking about dash cams on their newer models.
I have a VIOFO A229 I'd move from my old car.
